Pizza Extravaganza !

After a hard day at work and the same old tiring grind,  you need to drown yourself in something that makes you happy. Well for me, it lies in my special someone and food !

Italian Cuisine has always been my favourite, whether it is the pasta or thin crusted pizzas and most of all, GELATO ! They are all a delight to prepare and recreate. So today lets recreate a pizza with a twist ! For all of you who love the soft chewy crusts instead of the thin ones or as I would like to call it, the American Pizza. Today I am going to help you create a BBQ Chicken Pizza .. Here we go !


  • 5 cups All Purpose Flour
  • 1 tbsp Yeast
  • 1 cup Melted Butter
  • Olive Oil
  • ¼ cup milk
  • 1 cup Mozarella/Cheddar cheese
  • Salt
  • Tomato Paste
  • 3 Large Red Onions
  • 9 cloves Garlic
  • Tomato Ketchup
  • Brown Sugar
  • Paprika Powder
  • Chilli Flakes
  • Worcestershire Sauce
  • 1 can of Coca Cola
  • Apple Cider Vinegar
  • 1 tbsp of A1 Steak Sauce
  • Chicken Breast
  • Turkey Ham/Bacon
  • Mushrooms
  • Italian Herbs
  • Your favourite topping choices 🙂

First you run flour, salt and 1/2 tsp of baking powder through a sieve to aerate the flour. Then in a smaller bowl put yeast and warm milk and leave aside to ferment. Pour in the melted butter and a little olive oil with a cup of warm water and slowly start kneading the flour. Then add in the yeast and keep kneading till you form a nice firm ball. Moisten the dough with olive oil and cover it loosely with cling film and leave in a dry corner to proof/rest.

For the sauce : Chop the onions and garlic finely and add it to a saucepan with olive oil and saute. Add some sugar, salt, pepper, Worcestershire sauce, A1 sauce, ketchup, paprika powder, tomato paste and keep sauteeing. Slowly pour in the cola ( Be careful not to burn yourself with the sputtering ) and a little water with vinegar and keep it on a slow simmer till the sauce thickens.

For the chicken : Wash the chicken breasts thoroughly and poach it in a saucepan with water,milk,salt,pepper,butter, 1 onion cut into four and 4 crushed garlic cloves for 10 mins. After the chicken is cooked just dice it and keep aside.

Now here comes the time where everyone gets together and has some fun ! Involving kids at this point of time is the best thing to do ! So lets begin !

First preheat the oven. Then take the dough and knead it once more and flatten it out into a disc, leave it a little thick if you want a thicker crust.  and pop it in the oven for 5 mins to blind bake (pre half baking). This method ensures that the dough is not semi cooked and remains crispy. Take it out of the oven and leave it to cool. Once cooled, spread the bbq sauce evenly around it and sprinkle some cheese. Then add the chicken, ham and bacon ( If you want different toppings, go ahead and add them ! ) and sprinkle a lot of cheese on top and crushed oregano. Now you can pop it in the oven till the cheese melts. Take it out and enjoy !!!!

To be honest, cooking does not require specific measurements or a lot of technicality. It is way simpler when you use your own gut feelings and add salt, spice or any ingredient for that matter when preparing your dish. That is what I do and it has definitely got me a lot of success ! So try preparing recipes without measuring it at least once, and let me know how it went 🙂
