Chicken Fajita’s

I am on another world tour and this time I decided to camp at Mexico ! Those tortilla’s, churros, spicy hot chocolates .. An endless Aztec food adventure ! I had been craving for some grilled fajita’s after making the Picadillo burritos and decided .. The readers want more, my tummy wants more, his tummy wants more .. Lets give you all some more !

Fajita being a dish is also a word that appears in the Oxford Dictionary ( Bet you didn’t know that ! ) with a very mouth watering description. Strips of spiced meat wrapped in a soft tortilla with grated cheese and served with sour cream. Bingo ! That’s exactly what I prepared last night 😀

So lets embark on a Mexican Adventure with my rendition of Chicken Fajita’s ! Here we go !

SHOPPING LIST :

  • 2 Large Chicken Breasts
  • 1 Packet Mushrooms – Sliced
  • 4 Bell Peppers ( 1 each of different colours ) – Sliced
  • 1 Large White Onion – Sliced
  • 4 cloves of Garlic
  • 1 Orange
  • 1 Lemon
  • Handful Coriander Leaves
  • 3 Spring/Green Onions
  • Soft Tortilla Breads
  • Grated Mozzarella and Cheddar Cheese
  • 2 Tbsps Honey
  • 1 Tbsp Mustard
  • 1 Tbsp Paprika Powder
  • 2 Tsp Cumin Powder
  • 500 gms Yoghurt
  • Salt and Pepper to taste
  • Worcestershire sauce
  • Oil and Butter to fry 

First up is the marinade for the chicken. In a blender add the honey, mustard, paprika, garlic, cumin powder, Worcestershire sauce, juice of half an orange and lemon, salt, pepper and coriander. I also added the zest of the orange, to zest an orange you need to take a cheese grater with fine holes and grate the orange skin. You would require just a pinch. This makes the marinade a lot more zingy and zesty in flavour.

After you blend it for about 2 minutes, you should get a nice smooth paste. Add in around a tablespoon of oil and blend it again. Then keep it aside and get the chicken breast ready.

Wash the chicken thoroughly and pat it dry with a tissue. With a knife, make slits along the breast so that the marinade can penetrate into it and flavour the chicken. Spread the marinade all around the chicken breast and keep it in the fridge for at least 15 minutes.

Next start prepping the vegetables starting with the onion. An easy way to cut the bell peppers is to slice the 4 edges, this way you will be able to avoid the trouble of removing the seeds ! Slice the bell peppers as well as the mushrooms. Keep aside.

Now, preheat the oven and simultaneously in a frying pan pour some oil and 1 tbsp Butter. Place the chicken and turn it immediately once the side is browned. Do the same for the other side as well and take it off from the pan. This method is known as searing. It keeps the juices inside the chicken and that’s how it remains moist. Pop the chicken in the oven for 15 mins or until it cooks thoroughly. In case you have a grill, you can grill the chicken as well 🙂

Its time to stir fry the vegetables ! In a pan heat some oil and fry the onions. Next add the mushrooms and bell peppers with some salt and pepper and keep stirring till they become soft.

The fun starts here now ! 😀 🙂

You can make sour cream with the yogurt and a dash of lemon juice. Add in some chopped spring onions for a fresh herby flavour. Once the chicken is cooked, take it out from the oven and slice it into strips. Take a tortilla bread, spread out sour cream on it. Then arrange the chicken and vegetables vertically on it and grate the cheese on top.

Fold it in the middle like a wrap and place it on a hot flat griddle pan, the folded side down first so that the fajita seals and does not open up. Then flip it on the other side and grill until its nice and brown. Slice it into half and munch away !

Just one fajita is enough to fill your tummy. Its an easy and fast dish to make and will also make a great starter or main dish for a party ! Do let me know how it went in case you decided to prepare it ! Small tip : Serve it with sour cream and salsa dip. It’s a sure shot winner !
